Αν και υπάρχουν γύρω στα πενήντα είδη, δυο είναι οι τύποι που γνωρίζουμε καλά και που καλλιεργούνται συστηματικά : ο Coffee Arabica, που συναντάται στο 80% των χωρών παραγωγής και ο Coffee Canephora, τύπος που είναι ευρύτερα γνωστός ως Robusta.
